Sponge cake with sour cream

Even a novice housewife can make a chocolate cake with sour cream. The cake is easy to make and is made with available products. The main thing – it’s delicious! Let’s get started! For this recipe we will need: 240g of flour, 280ml of kefir, 30g of cocoa powder, 1 tablespoon of soda, 2 eggs, 2 tablespoons of vegetable oil and 150g of sugar. The cream will be sour cream. We need: 500 grams of sour cream, 150 grams of powdered sugar and vanilla to taste. Take a baking dish with a diameter of 20-24 cm (metal or silicone).

For the dough:

  • 240 g flour,
  • 30 g of cocoa powder,
  • 280 ml kefir,
  • 2 eggs,
  • 2 tablespoons vegetable oil,
  • 1 tsp. soda,
  • 150g sugar;

for the cream:

  • 500 g sour cream,
  • 150g powdered sugar,
  • Vanilla to taste.

How to make:

  1. Line the bottom with parchment paper and grease it with vegetable or butter. Pour the kefir into a bowl. Add baking soda. Stir just a little. We leave it for 5 minutes to activate the baking soda. The kefir begins to play, bubbles appear. Then we add the eggs. Vegetable oil. Sugar. Stir everything well. Sift the cocoa powder so there are no lumps. Sift the cocoa powder through the sieve. Sift flour gradually through the sieve. Knead the dough. Knead the dough with a whisk.
  2. Pour the dough into the baking dish, using a spatula. Like liquid chocolate. Place the biscuits in a preheated 170°C / 340°F oven. After 40 minutes check that the biscuit is ready with a wooden stick. Poked it – the stick remains dry, so the biscuit is ready. Leave it to cool. Cut the top off the sponge cake. Cut biscuit lengthwise into 2 parts. If you take a baking dish with a diameter of 20 cm, the biscuit will be higher. It is soft and dense. At the same time, it is porous and beautiful.
    Now we make the cream. This is the simplest sour cream. I have sour cream 20% fat, bought in the store. You can use homemade sour cream in this recipe. We add powdered sugar. We mix it up. Crush the top of cut off sponge cake to get sponge-crumb mixture. Let’s assemble the cake! Butter the first cake generously. The remaining cream grease the second cake. Sprinkle the sponge-cake crumbs on top of the cake. The cake can be decorated with crushed nuts, grated chocolate or fruit.
